Cooking Lobster
There are hundreds of ways to serve Maine Lobster. The most popular cooking technique is Steaming. Most recipes that call for preparing lobster meat in another fashion assume that the lobster has all ready been boiled or steamed.

 Steamed Lobster

Place two to three inches of water in a large pot. Add several tablespoons of sea salt. Once the water reaches the boiling point, place the lobster in the pot and cover. Cook for approximately fifteen minutes for live lobster, seven minutes for partially cooked lobster, or two minutes to reheat fully cooked lobster. The lobster is fully cooked when the shell turns red and one of the antennae pulls out easily.

1) Carefully, take the rubber bands off the claws before placing in the boiling water. Some say that this does not matter, but most Mainah's (Mainer-said the right way!) take them off so the rubber taste doesn't effect the sweet lobster taste.

2) Place lobster in pot claws first. It is a sailor's myth that lobsters scream when placed in the pot! It just air escaping from the lobster's shell. Don't feel guilty!! Lobsters do no have a nervous system and therefore can't feel heat or pain. So, don't feel bad when you drop them in the water.

3) Use real sea salt in the water, if its available. If not still add plenty of salt to the water, it helps accentuate the lobster flavor.

Remember: Excess water will come out of the lobster shell when you first crack it open!

Eating Your Lobsters

Hard Shell lobsters can last over 24-36 hours out of water. If one happens to pass, please call us to walk you through checking the lobster to make sure it can be eaten. Typically, this can be done up to 12 hours after the lobster has passed.

Soft Shell
lobsters can last 4-6 hours out of water, and should be half-cooked or fully cooked if traveling long periods or if they are being shipped.

 
With either Soft or Hard shelled lobsters that are half-cooked or fully cooked, as long as you keep them cold, you have approximately 3 days before they start to spoil.

Nutrition

The Maine Lobster is not only a delicacy in the mouth watering sense. Maine Lobster is also good for you. Seafood has been known as a very healthy alternative to some other protein filled foods. Lobster has less saturated fat, calories and cholesterol than beef, pork, and yes, even chicken. Maine Lobster also contains a good amount of Omega-3 Fatty Acids. These acids are the ones that help reduce hardening of arteries and risk of heart disease. Lobster also contains Amino Acids, Potassium, Magnesium, Vitamins A, B12, B6, B3 (Niacin), B2 (Riboflavin), Calcium, Phosphorus, Iron, and Zinc. Not that an excuse is needed to eat Lobster, but it's healthy aspects certainly do not hurt.
